Apple Cake, delicious dessert for Rosh Hashanah


3 c all purpose flour

1 ½ c sugar and 1 t cinnamon mixed into the sugar

1 c vegetable oil

4 eggs, beaten well

½ c orange juice

2 t vanilla

1 t salt

3 t baking powder

4 medium large tart apples, pared, cored and sliced thin


Preheat oven to 350 degrees

Measure everything into a mixing bowl except for the apples and the cinnamon-sugar mixture.

Beat until smooth. Pour 1/3 of the batter into a greased and floured bundt pan.

Arrange half of the apples over the top of the batter and sprinkle with the cinnamon-sugar. Pour on half of the remaining batter, then add the rest of the apples and sprinkle some more of the cinnamon-sugar mixture. Pour the rest of the batter over the top of the apples.

Bake for about an hour or until a toothpick inserted into the cake comes out clean.

Variations: Substitute sliced prune plums for the apples.
