Crisp Potato Kugel

6 Medium baking potatoes, peeled (about 4 lbs.)
1 lg. onion, peeled
2 lg. eggs
1 tsp. kosher salt and freshly ground pepper to taste
6 T. margarine, melted
2 T. matzo meal or all-purpose flour
2 T. additional margarine

Place rack in upper third of oven, preheated to 400 degrees. Grate potatoes and onion in food processor with shredding disk or use a hand grater. Place in a colander to drain. Using a clean dish towel squeeze out excess moisture from the potatoes and onion. In a large bowl whisk eggs, salt, melted margarine and matzo meal. Stir in potato and onion mixture until well combined.
Melt 2 tablespoons of margarine in a 9 X 13-inch baking pan. Coat bottom of the pan. Pour in the potato mixture and spread evenly. Bake uncovered at 400 degrees for 15 minutes. Reduce oven temperature to 375. Continue baking for about 45 minutes or until the top is crisp. Cut into squares. Makes 8 servings.
