Applesauce and sour cream are traditional and yummy toppings, but here are some new and creative topping ideas for Hanukkah celebrations. Be creative and have fun!
Party Size Latkes: To make hors d’oeuvres-size latkes, use your favorite recipe but fry them in 2 ½ inch cakes. (Use a heaping 2 tablespoons of potato mixture.) Drain on paper towels. When cool enough to handle, top with any of the following:
SMOKED SALMON CREAM CHEESE AND SALMON CAVIAR Spoon the cream cheese over the latke, topping with beads of salmon caviar.
GORGONZOLA AND BRANDIED FIGS Cover chopped figs with just enough brandy to reach halfway up the sides of a small saucepan. Bring to a simmer, stirring and tossing the fruit, then turn off the heat and cover the pot; let sit for an hour. Drain figs and use them to garnish gorgonzola-sprinkled latkes.
CRÉME FRAÎCHE BLACK PEPPER AND PEAR BUTTER Add a dollop of crème fraîche, grind some pepper and top with a spoonful of pear butter — store-bought or put up. Pumpkin and apple butter work well here, too.
SMOKED TROUT MOUSSE Whip some heavy cream until peaks form, and fold in horseradish, chopped chives and black pepper. Then stir in flaked pieces of smoked trout.
POMEGRANATE SEEDS AND GREEK YOGURT Whisk thick Greek yogurt with a little honey. Spoon atop the latke, crowning with pomegranate seeds.
MANGO CHUTNEY AND TOASTED PUMPKIN SEEDS Toast pumpkin seeds until they are slightly golden brown and aromatic. Sprinkle on top of the chutney. Serve alongside a bowl of plain Greek Yogurt for a tangy finish.
NUTELLA BANANAS AND CHOPPED HAZELNUTS Saute sliced bananas over medium heat in a nob of butter for a few minutes to soften them up. Spread Nutella over the surface of the latke. Arrange the bananas on top. Sprinkle with toasted, coarsely chopped hazelnuts.
SMOKED SALMON OR LOX WITH CREAM CHEESE AND CHIVES Spread potato with softened cream cheese. Add a thin slice of salmon folded over. Garnish with freshly chopped chives.
