Spinach and Artichoke Strata

Serves 6


2 T olive oil

2 cups fresh spinach, washed and patted dry

3 green onions, sliced thin (white and light green parts only)

2 cans artichoke hearts (drained)

8 oz. (about 5 cups) day old baguette, cubed

6 oz. shredded Mozzarella cheese

1/2 c. freshly grated Parmesan cheese

1 3/4 c. milk

2 t. Dijon mustard

1/2 t. freshly ground black pepper

   Kosher salt (to taste)

Dash of ground nutmeg

5 large eggs


Preheat oven to 375 degrees Fahrenheit

Grease oven-safe 11’ x 7’ glass or ceramic baking dish with non-stick spray

Combine first 6 ingredients in a large bowl and toss

Arrange bread mixture in the prepared baking dish, and sprinkle Parmesan cheese on top  

Combine milk, Dijon, pepper, salt, nutmeg and eggs in a bowl and whisk. Pour egg mixture over bread mixture. Add additional grated Parmesan cheese topping, if desired.

Bake at 375 degrees for 40 minutes or until fully set and golden brown on top. Let rest for about 5 to 10 minutes before serving.
